Homemade Caramel Corn 'n Nuts
A friend of mine made this popcorn at Christmas time and I just got the recipe from her and made it this week (minus the nuts). I love this caramel corn because it doesn't break your teeth. The recipe actually comes from Land O Lakes.
HOMEMADE CARAMEL CORN 'N NUTS
Preparation time: 45 min Baking time: 45 min
Yield: 18 cups
|20||cups popped popcorn|
|2||cups firmly packed brown sugar|
|1||cup LAND O LAKES® Butter|
|1/2||cup dark corn syrup|
|1/2||teaspoon baking soda|
|1||cup salted mixed nuts|
Heat oven to 200°. Place popcorn in large ungreased roasting pan; set aside.
Combine brown sugar, butter, corn syrup and salt in 2-quart saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a full boil (12 to 14 minutes). Continue cooking, stirring occasionally, until candy thermometer reaches 238°F or small amount of mixture dropped into ice water forms a soft ball (4 to 6 minutes).
Remove from heat; stir in baking soda. Carefully (mixture will be hot)pour over popcorn; sprinkle nuts over caramel mixture. Stir until well coated.
Bake for 20 minutes; stir. Continue baking for 25 minutes. Remove from oven; immediately place caramel corn on waxed paper. Cool completely. Break into pieces. Store in container with tight-fitting lid.
